Chamomile (Matricaria chamomilla), also known as German Chamomile, is a hardy annual aromatic herb that typically reaches 30–60 cm tall, forming soft, feathery green foliage and masses of small daisy-like flowers with white petals and golden yellow centres. The flowers are edible and are most commonly harvested for herbal teas, where they offer a gentle, floral, apple-like flavour. They can also be used fresh or dried in syrups, desserts, baking, infused honey, herbal blends, and soothing bath preparations. Chamomile is easy to grow and is ideal for gardeners of all experience levels, bringing edible flowers, fragrance, pollinator support, and delicate beauty to herb gardens, kitchen gardens, wildflower areas, containers, and permaculture plantings.

Chamomile thrives in full sun to partial shade and prefers well-drained, moderately fertile soil, tolerating lighter or poorer soils once established. It is hardy in Ireland’s cool temperate climate and will often self-seed gently where conditions suit it, returning naturally in future seasons. Its aromatic flowers, long harvesting period, edible and medicinal uses, and value for bees and beneficial insects make it an excellent choice for wildlife-friendly edible gardens and low-maintenance regenerative growing systems.

Growing Instructions

Plant in full sun or partial shade in well-drained, moderately fertile soil enriched lightly with compost. Avoid overly rich or waterlogged ground, as this can encourage weak, leafy growth at the expense of flowers. Water regularly during dry spells, especially while establishing young plants or when growing in containers, and apply a light mulch of compost or leaf mould to retain moisture and support healthy growth.

Harvest flowers regularly when they are fully open, using them fresh or drying them carefully for tea and later use. Allow some flowers to set seed if you would like Chamomile to naturalise and return in future seasons. Its edible apple-scented flowers, pollinator value, gentle herbal uses, and easy-care nature make it perfect for herb gardens, kitchen gardens, containers, wildflower areas, companion planting, and permaculture systems seeking beauty, biodiversity, and useful aromatic flowers.
