Sunchoke (Helianthus tuberosus), also known as Jerusalem artichoke, is a perennial sunflower species in the Asteraceae family. It grows tall, up to 3 metres (10 feet) with bright yellow sunflower-like blooms in late summer. The plant produces edible, knobbly tubers underground that are rich in inulin and have a sweet, nutty flavour.
Sunchokes are excellent for diabetics because they contain a substance called inulin.

Sunchokes thrive in full sun and tolerate a wide range of soils, preferring well-drained, fertile ground.
They are vigorous and can spread rapidly through their tubers, so space accordingly or contain roots if necessary. Harvest tubers after the first frost for best flavour. Excellent for biomass production, soil improvement, and as a unique edible crop.
