Elephant Garlic (Allium ampeloprasum) is a large, perennial bulbous plant in the Amaryllidaceae family, closely related to leeks rather than true garlic. It produces huge bulbs up to 10 cm across and grows up to 90 cm tall with broad, flat leaves. It also produces impressive flowers if it is left alone and not harvested.
The flavour is milder and sweeter than common garlic, making it popular in cooking for those who prefer a less intense taste.

Elephant Garlic grows best in full sun and well-drained, fertile soil with good organic matter.

Plant cloves individually in autumn for a summer harvest. It requires regular watering during the growing season but benefits from dry conditions during dormancy. Suitable for vegetable beds, edible gardens, and permaculture setups where large, mild-flavoured garlic is desired.
