Good King Henry (Blitum bonus-henricus, formerly Chenopodium bonus-henricus) is a perennial leafy green in the Amaranthaceae family, traditionally cultivated as a “poor man’s asparagus.” It grows up to 60 cm tall and produces thick, triangular leaves and tender shoots that can be eaten like spinach or asparagus. Once common in cottage gardens, it's now a rare and resilient perennial vegetable.

Growing Instructions
Good King Henry prefers full sun to partial shade and well-drained, moderately fertile soil. It thrives best in permanent beds with little disturbance.
Slow to establish in the first year, but becomes more productive with time. Harvest young leaves and shoots regularly to encourage new growth. Mulch in winter and divide mature clumps every few years to maintain vigour. A great addition to perennial vegetable gardens and low-maintenance food forests.
