Black Salsify (Scorzonera hispanica)(approx. 25 seeds per packet) is a distinctive heirloom root vegetable native to southern Europe and well adapted to Ireland’s cool, temperate climate. Often called the “oyster plant” for its subtle, nutty flavour, it produces long, slender black roots with creamy white flesh that’s tender and richly flavoured when cooked. The young leaves and flower buds are also edible, offering a mild, earthy sweetness.

 

In its second year, black salsify reveals a hidden beauty — tall stems topped with vivid purple, daisy-like flowers that open each morning and close by afternoon. These blooms are highly ornamental and rich in nectar, drawing bees, hoverflies, and other beneficial insects to the garden.

 

Growing 60–90 cm tall, black salsify thrives in full sun and deep, loose, well-drained soil — ideally free of stones to encourage straight roots. It’s a slow but rewarding crop that stores well through winter and self-seeds gently if allowed. Like all Earthling vegetables, it’s an open-pollinated heirloom, supporting biodiversity and true-to-type seed saving.

Seeds are long and slender, easy to handle but best sown fresh for reliable germination. Sow outdoors from March to May, 1–2 cm deep in finely prepared soil. Space plants 10–15 cm apart in rows 30 cm apart. Keep the soil evenly moist during germination (which may take 2–3 weeks). Harvest roots from late autumn onwards, or allow some to flower for beauty and seed. Store seeds cool and dry until sowing.
