Skirret (Sium sisarum) is a perennial root vegetable in the carrot family (Apiaceae), historically cultivated across Europe. It grows as a clump of leafy green stems up to 1.5 metres tall and produces clusters of sweet, white roots that resemble thin parsnips. The roots are tender when cooked and have a flavour somewhere between carrot and potato.
