Sage (Salvia officinalis) is a hardy, evergreen perennial herb that typically grows to 40–70 cm tall, forming a compact, bushy shrub with soft, grey-green aromatic leaves. In late spring to early summer, it produces spikes of purple-blue flowers that attract bees and other pollinators. Sage is widely valued for its culinary and medicinal uses, with its earthy, savoury flavour making it ideal for seasoning meats, vegetables, stuffing, and herbal teas.

 

Sage thrives in full sun and well-drained, moderately fertile soil. It is well suited to Ireland’s cool temperate climate, provided it is planted in a sheltered spot with good drainage, as it dislikes waterlogged soil. This low-maintenance herb is an excellent addition to herb gardens, food forests, permaculture systems, and pollinator-friendly plantings, offering both practical and ecological benefits.

Growing Instructions

Plant in full sun in well-drained soil enriched with compost or organic matter. Avoid heavy or poorly drained soils. Water regularly during the first few weeks after planting to establish roots, but once established, sage is drought-tolerant and prefers slightly drier conditions. Apply a light mulch of compost each spring to support soil health without overfeeding.

Prune lightly after flowering to maintain a compact shape and encourage fresh growth. Replace plants every few years if they become woody. Harvest leaves as needed throughout the growing season, ideally before flowering for the strongest flavour. Sage is hardy and evergreen, providing year-round structure, fragrance, and culinary value.
